Z Trim Offers Bakers and Restaurateurs A New Option For Preparing Delicious, Traditional-Tasting

Mundelein, IL - A product now available nationwide makes possible cost-effective, zero-calorie, all-natural fat replacement. Z Trim can be used to replace up to 50 percent of added oil, butter and other fats, including trans-fats, in baked items, bakery fillings, cream sauces, condiments, entreés, appetizers and processed meats, without sacrificing flavor or texture.

An amorphous viscous fiber rendered from cereal grain such as corn, oat and soy, Z Trim's patented process renders the insoluble fiber of grain into a soluble gel that mimics fat. Z Trim can also be used to emulsify, bind, shape and suspend. Z Trim conveys only the taste of the other ingredients in any formulation in which it is used.

Z Trim does not create the unpleasant side-effects that have been associated with some fat replacement products of the past. A study published in the Journal of the American College of Nutrition indicated that people tolerated typical quantities of Z Trim with no difficulty.

Z Trim was developed by Dr. George Inglett, a leading scientist at the USDA's Agricultural Research Service. The product was then exclusively licensed by the U.S. government to the Z Trim Holdings subsidiary, FiberGel Technologies.

In Chicago, restaurant owner Frank Bruscianelli recently began using Z Trim at his Renaldi's restaurant in the Lakeview neighborhood. Customers have the option of ordering some menu items with Z Trim. Renaldi's customers can enjoy lobster strufolato, fetuccini Alfredo, baked lasagna, ravioli dishes, garlic bread, and Italian and Caesar salad dressings made with Z Trim. For Bruscianelli, the Z Trim option represents a cost-effective way to offer something that many new, young residents of his restaurant's trendy area are seeking: Delicious, traditional-tasting dishes that are healthier and lower in fat than the original versions.
