Novozymes Awarded For Chinese Bakery Enzyme Innovation

Frost & Sullivan, the growth partnership company, awarded Novozymes with their Excellence in Innovation Award. The award recognizes a company which has demonstrated leadership through significant excellence in innovation and exceptional creativity in meeting and delivering to customer needs and expectations. It was the recent launch of Novozymes Novamyl Steam and the enhanced flexibility this solution offers Chinese steamed bread manufacturers that highlighted Novozymes' impact on the baking industry.

Novamyl Steam raises the eating quality of steamed bread while extending its shelf life. "Until now, it has only been possible to steam and sell steamed bread on the same day, but steamed bread produced using Novamyl Steam can stay soft and fresh for longer." explains Petra Mehrtens-Rothe, Novozymes' Regional Marketing Manager for Food, "Novamyl Steam raises the eating quality of steamed bread through extending and maintaining softness, crumb structure and elasticity. Chinese consumers have never been more aware of what they eat and demand high-quality products processed in a sanitary manner. The consumer desire for quality is forcing the industry to become more industrialized and encouraging large-scale production of steamed bread. However, its development has been constrained by the perishable nature of the product. The extended fresh-keeping offered by Novamyl Steam brings new flexibility to steamed bread manufacturers, enabling the creation of quality products in a safe environment. Longer-lasting freshness also optimizes the production and distribution of steamed bread.
