Better Bread With New Enzymes From Danisco Cultor
(February 27, 2001) - Danisco Cultor's new POWERBake line includes a number of enzyme and enzyme/emulsifier products that improve dough handling for industrial bakers and ensures a consistently high bread quality for consumers.
In wheat flour, the content of enzymes is of major importance for achieving a good baking result. Due to factors such as weather and climactic conditions, the natural content of enzymes in wheat flour often varies, resulting in inconsistent bread quality. To compensate, enzymes are often added to the flour to adjust its baking properties. With POWERBake, you can adjust and improve the flour's enzyme content, giving bread dough properties that are more stable, thereby making the baking process easier and more reliable. The end product is bread with the desired texture and volume. POWERBake enzymes are often used in conjunction with Danisco Cultor's emulsifiers to provide the baker with high-performance bread formulations with optimum tolerance to the conditions of stress associated with high output bakeries.
The POWERBake line has just been launched in the US and Mexican markets. The products are already selling well, experiencing double-digit growth rates. According to Lars Obel, Danisco Cultor's Industry Manager for Bakery, "Customers in the US baking industry regard POWERBake as the best among a number of enzyme products currently available in this market."
The launch of the POWERBake line is a result of many years of experience in biotechnology and an in-depth knowledge of the processes involved in bread baking. This knowledge has been accumulated through close cooperation with customers and extensive research at Danisco Cultor's own pilot plants, where the industrial baking process can be simulated.
Danisco sees great sales potential in the POWERBake line and expects high growth rates in the area. Net sales on the world market for these types of products amount to more than $50 million USD.
